They don't *need* them. Remember the Gameboy Color? I'd say it has more to do with the fact that a digital watch or somesuch is a high-contrast picture with simple components. When you start wanting to display a picture, you've got higher image quality standards to meet. Your reasons may have something to do with it, but I don't recall unlit color LCDs being that much worse than their B&W counterparts, which don't look all that good either.
